I noticed a picture of another members bike with rocker cover off while the engine was still installed. This leads to my question. Is it possible/practical to change the cam chain while the engine is still in the bike?

Possibly it was my bike. The picture is decieving, just about everything had to come apart. I was fixing an oil leak from the rocker box and I hoped to be able to lift the top cover enough to get some sealant on the mating faces, howeve there was a dowel missing too so the cover had to come right off.
As to doing a cam chain there is no reason why you couldn't do it the way I did. You could use a split chain, or I think take the clutch cover off and fit a continious. I've done both in the past on other bikes never had any problems.
On the other hand it might be better to have the engine out and work on the bench. Its easy to srcatch the frame the way I did things, I just needed to get the job done quickly
