Try putting a magnet to it,high grade stainless steel (316 grade and above) are non magnetic,however the lower grades (304) are but only slightly, nothing like mild steel.
I have also seen Stainless chain but only in industrial use where the speed is very slow,most industrial chain is speed rated a lot lower than motorcycle chain.
Knew a guy that was running industrial chain on a 750 kwaka where it was seeing in excess of 200kph ,dont think it ever came off scarry thought though.
