I never owned one, but i was negotiating to buy an M21 and rode it a few times(see pic). Good fun and very slow. If you retard the ignition when riding up a hill, you do not need to gear down. It just pulls at 1000 rpm. (but runs hot!) When retarded, the ignition occurs after tdc. This combined with a compression ratio of 5:1 and side valve arrangement makes for easy starting with the exhaust valve still open. If you lift the valve too far on a ohv engine, it may interfere with the piston. I would not consider attempting to start with the exhaust valve open an option.

Guilty as charged your honour!
I start my 1949 G80 Matchless (OHV engine) the same way when it is cold. Ignition fully retarded, tickle the carbie, hold in the valve lifter, start turning over the motor by "pumping" the kickstarter until it is spinning at a few hundred rpm, then release the valve lifter. 90% of the time the engine starts up and settles down to a nice idle.
